Rich and Creamy Overnight Oats

Are you sometimes running late and leaving home in a rush with just an energy bar in your pocket? Or worse, skipping breakfast altogether?  Or maybe you stop by the first coffee shop on your way to work and grab coffee and a breakfast sandwich or a pastry that will make you crash 2 hours later and reach for that extra cup of coffee?  

I know the struggle! There is a lot to do in the morning and getting out of the door on time is a challenge in itself, let alone preparing a healthy and nutritious breakfast for you and your family!

This recipe will help you! It is super easy to prepare ahead of time, it is really creamy and delicious, and if you truly are in a rush, you can just grab it from the fridge, go, and eat it at your desk.

Ingredients

For 7 serving:
  • 2 cups Oats (rolled)
  • 8 TBSP Chia Seeds
  • 2 and 2/3 cup Unsweetened Almond Milk
  • 4 tsp Vanilla Extract
  • 2 cups Plain Greek Yogurt

Preparation

Add all the ingredients to a bowl and stir well to combine.

With a small laddle, divide into seven 8-oz mason jars.  Seal and place in the fridge overnight, or for at least 8 hours.

Store in the fridge until ready to eat. Enjoy cold, together with a piece of fruit or a cup of berries. If needed, you can add a teaspoon of maple syrup or honey when ready to eat, but if you enjoy this oatmeal without added sugar, that's even better, so I suggest you try it plain first.

Notes

  • Suggested Toppings: Fresh or frozen fruit, crushed nuts, hemp seeds, coconut flakes, nut butter, or chia jam.
  • Why Greek yogurt? You can use another type of yogurt if you wish, even vegan yogurt if that works best for you. I suggest Greek yogurt because it has a high protein content, and is very smooth and creamy even when low-fat or no-fat.

These overnight oats are derived from a recipe by Clean Food Crush. A dear client of mine, who has been working on meal planning and meal prepping, shared the original version with me and we made it together during a coaching session. I made a few changes to the original so that it's even faster to make and healthier to eat. My client loves this recipe and makes it regularly for herself and her husband (I do too!). I am very grateful that we were able to prepare this delicious breakfast together and that she now has an easy go-to option for breakfast. She hasn't skipped breakfast for weeks!!!
