Sweet Potato & Avocado Toast

Many of my clients understand that starting their day with cereals or a slice of white bread is not optimal and will most likely lead to unstable energy levels throughout the day, and sugar cravings at night. Yet, it’s not always easy to change our habits, especially when life is busy and we often rush out the door shortly after waking up in the morning.

If that’s your case, here is a great recipe for you! Quick, easy, delicious, it is also gluten-free and grain-free, if that matters to you. It is loaded with nutrients, fiber, healthy fat, and the glycemic index is lower that what you will get with processed carbs such as bread or granola. Try it out, and let me know how you like it! My family was skeptical at first, but it only took one breakfast to rally them behind this Sweet Potato & Avocado Toast delight.

Ingredients (for 2)

This recipe will yield to 4 toasts (2 toasts per person).

  • 1 large sweet potato
  • 4 eggs
  • 1 avocado
  • salt and black pepper to taste

Preparation

1/ Trim the pointy ends off the sweet potato then lay it on its side on a cutting board. Slice it lengthwise into 1/4 inch slices.

2/ Pop the sweet potato slices into the toaster and toast 2 to 5 times, depending on your toaster. If you do not have a toaster, set your oven to broil and bake on a sheet for 3 - 6 minutes per side, or until golden brown.

3/ While the sweet potato toasts, carve the flesh of the avocado out into a bowl. Season with a pinch of sea salt and black pepper and mash with a fork.

4/ Poach, fry or boil the eggs.

5/ Spread the mashed avocado over the sweet potato toasts and top with cooked eggs. Season with sea salt, black pepper and/or red pepper flakes. Bon appétit !

Notes

  • Potato Scraps: You will most likely end up with little pieces of potato that you can't toast. Store in the fridge or dice into cubes and store in the freezer for making roasted sweet potatoes or soup down the road.
  • Add Greens: Add a layer of baby spinach after you spread on the avocado.
  • Guacamole Twist: Add lemon juice, lime juice, minced garlic, tomato and/or chopped red onion to your mashed avocado.
  • Egg Free: Skip the eggs and top with hemp seeds instead, or add a generous layer of hummus.
